It’s been a busy couple of weeks… There was a World Series, and a time change, and an election, and the weather jumped all over the place so there have also been many migraines… Fortunately my use of the Planning For Meals methods has also meant that, even on really difficult days, we have had good, easy dinners.
Meanwhile… food…
I don’t seem to have taken a picture of breakfast, so have recycled an old one. I seem to be as obsessed with cheesy grits and eggs as I was with bean tacos – largely because it is just as easy. I really need to be able to walk into the kitchen and start breakfast without thinking… and making the same thing almost every day helps with that. I probably wouldn’t even really notice that I was doing it if I didn’t write about it!
Lunch, though – I feel almost as if it’s an illustration, and I really didn’t intend it that way. It was just lunch. But it’s a rice bowl, with ham from the freezer, and the roast vegetables I wrote about yesterday, and the peanut sauce I wrote about the week before… all over made ahead brown rice. Simply assembled and heated. Could not be easier…
I heated some more of that ham for dinner. Cut it up and fried it up with cubed potatoes and cabbage. I must say I like having cabbage on hand, because it is so easy to prepare and cook. A sprinkling of caraway seed would have been nice – too bad I just thought of it now!
Even when I’m wiped out (I really need to catch up on sleep!) we do eat good food…
