What I Ate Wednesday #2
Breakfast – Again, a protein shake with protein powder, cider, and plain yogurt. Steel cut oatmeal with apple butter. And last week, I forgot to photograph my coffee…
For lunch, I had a frittata…omelet… something… (Properly a frittata is run under a broiler or put in the oven to finish cooking the top. I just put the lid on…) But I had scallions, and celery, and hot peppers I’d frozen (and frozen peas I bought) and sauteed them in a pan, then added eggs. I’m eating half, here – Rich had the other half. (You can see two plates, ready for serving…) A little cheese melted on top, whole wheat toast, and a glass of water.
For dinner, I sauted leeks, and pieces of pork loin, then added white beans. Plenty of sage and thyme…It’s not particularly pretty, but it tasted good. And I made enough for two meals, so I have it on hand. I served that over brown rice, with broccoli rabe. And a glass of ice water, with a splash of lemon juice. I’ve recently started using an attractive pitcher for ice water on the table so we don’t have to keep getting up to refill the glasses. Don’t know why it took me this long to think of it…

For some reason I’ve never thought of adding frozen peas to an omelette – will definitely have to give that a try!
I find it handy in winter, when I have to pay more attention to getting vegetables…
I heat them until they are just thawed, before I put the egg in, so they don’t affect the egg. Then they cook together beautifully.
