This has been sort of a crazy week for us, in terms of scheduling meals. Rich has been working a gig where he leaves at midday, and comes home… whenever he comes home…  (That’s finished now.) So he mostly hasn’t been home for dinner, but I haven’t always been sure whether or not he would be. Which complicates dinner planning a bit… Sometimes I’d make something I could hold, but as he started coming later and later, I switched to just making my own meal, and knowing there was food in the house if I needed to feed him when he came home. (Usually not – the person he was working for would get something when they were that late.)

And – just a few days into March, we already have more snow than usual for the whole month. So, between one thing and another, we’re all feeling cheerful… or something…  Spring? Could we have some spring here sometime soon?

And I kept forgetting to take pictures – so finally – this was yesterday…

I’m still eating the bean and egg breakfasts. Nice and warming and filling… These are Roman beans, so I chose not to smush them as refried beans, but enjoy their silky texture. These are also overcooked eggs…  I was distracted. It happens. They’re not as bad as overcooked fried eggs would be…

Lunch was better. There’d been some chickens, and a slow cooker, and… there is now cooked chicken, and quarts of broth, and along the way, there was chicken soup with rice. I don’t usually like rice in soup – it gets mushy – but it is fine if I add it just before eating, which I did here.

And I still forgot to take a picture of dinner… but at least I made something that gave me leftovers, so you have a picture of them. I’m playing with gf salmon cakes – and this is not the winner – but I had something Rich could heat and eat when he got home in the middle of the night (the deadline they were working up to) and that was the important part. I ate them with broccoli and a couple of rice cakes.  It was a meal.
