There is a rumor that Spring may finally be creeping around the corner… The weather is warmer, and I did see a few flowers and buds on my walk yesterday – though fewer than normal, for this time of year.
This is the blah time of year, here in New York… Winter is dragging on, there are a few buds and shoots promising Spring, but nothing has actually bloomed yet, and we’re tired of being cold.
As you may have noticed, I’ve been looking for salads that I can make in the winter, with winter vegetables (mostly root vegetables.) I knew that a classic French dish I had heard of was Celeri Rémoulade, made with celery root, also known as celeriac.
