Three Cheese Mac & Cheese

You didn't know how fast and easy - and delicious! - gluten free mac & cheese can be!

Ingredients
  

  • 8 oz gluten free macaroni
  • 3 oz cheddar cheese
  • 3 oz Swiss cheese
  • 2 oz mozzarella
  • 2 c milk
  • 3 gluten free roux cubes
  • 1 T prepared grainy mustard
  • 1 t prepared horseradish
  • 1/2 c gluten free breadcrumbs or crushed tortilla chips opt.

Method
 

  1. Cook macaroni, drain and rinse, and set aside. Cube cheese.
  2. Preheat oven to 350.
  3. Heat milk in a heavy pan while stirring in gluten free roux cubes until they melt and the sauce begins to thicken. Add the mustard and horseradish, and stir.
  4. Add the cheese, part at a time, stirring (to prevent scorching) while it melts smoothly.
  5. Once you have a smooth cheese sauce, remove from heat, stir in the macaroni. Then turn it into a one quart baking dish. Sprinkle crumbs (if using) over the top.
  6. Bake at 350 for 15 minutes.
  7. Remove from oven and let rest for five minutes before serving.

Notes

If you like, stir in extras with the macaroni - cooked ham or sausage, cooked or frozen vegetables.
