Method
- Take meat out of refrigerator.
- Preheat oven to 325.
- Place meat on a rack in a roasting pan.
- Place in oven at 325 and roast for 20 minutes.
- Lower heat to 250. Roast until internal temperature is at the doneness you want - see post for details.
- Remove from oven, and let sit for 20 minutes to reabsorb juices.
- Slice thin and serve, with jus.
