Method
- Preheat the oven to 350.
- Beat the eggs in a bowl. One at a time, mix in each of the other ingredients, until they are all well blended.
- Pour into a quart casserole.
- Bake at 350 for 40 minutes, or until fully set in the middle.
- Remove from oven, and let rest 10 minutes.
Notes
This can be either the main dish of a dinner for two, or a side dish for 4-6. It's a great way to use leftover greens and grain!
