Cool Summer Aspic

Servings: 2 cups

Ingredients
  

  • 2 c tomato or vegetable juice divided
  • 1 packet gelatin powder
  • dash hot pepper sauce or to taste
  • pinch of salt if needed
  • 1 T lemon juice
  • 1/2 t mixed herb seasoning

Method
 

  1. Put a half cup of juice in a small saucepan. Sprinkle the gelatin over the surface, and let it soften for about 10 minutes. Then gently heat the juice, stirring, until the gelatin melts.
  2. Stir in the rest of the juice, and all other ingredients.
  3. Pour into a bowl or 2 cup mold. Refrigerate 4 hours or longer.
