Chicken Casserole made with Simple White Sauce

Make a quick white sauce, and use it to bind a simple casserole of chicken and vegetables.

Ingredients
  

  • 1 c milk
  • 2 roux cubes
  • salt and pepper
  • 1 t thyme
  • 1/4 c cooked leeks or onion
  • 2 c cooked greens baby collards, chard, spinach, kale, any such, chopped small
  • 1 c cooked chicken

Method
 

  1. Preheat oven to 350.
  2. Place milk and roux cubes in a small heavy pan over medium heat. Bring to a simmer, stirring frequently. Once it is simmering, stir untl the sauce thickens.
  3. Add salt and pepper, thyme. Stir in the leeks and chopped greens.
  4. Place the chicken in the botom of a baking dish. Pour the vegetable sauce mixture over it. Smooth the top.
  5. Bake for 20 minutes, until it is heated through, and the top is browned.
