“Creme” of Broccoli soup
A simple, vegan soup, using the stems of broccoli to make a delicious first course.

- 1 pound broccoli stems
- 1 small onion chopped
- 1 clove garlic minced
- oil for pan
- pinch salt
- 12 oz package silk tofu
- freshly ground pepper
Trim and chop broccoli.
Saute onion and garlic in soup pot until soft.
Add broccoli, a pinch of salt, and a quart of water, Bring to a boil, then simmer on low for 5 minutes (or to your preference.) Let cool slightly, if desired.
Add silk tofu to the pot. Use an immersion blender to puree soup until mostly smooth.
Reheat to serving temperature.
Serve with freshly ground pepper.
