“Creme” of Broccoli soup

A simple, vegan soup, using the stems of broccoli to make a delicious first course.

Ingredients
  

  • 1 pound broccoli stems
  • 1 small onion chopped
  • 1 clove garlic minced
  • oil for pan
  • pinch salt
  • 12 oz package silk tofu
  • freshly ground pepper

Instructions
 

  • Trim and chop broccoli.
  • Saute onion and garlic in soup pot until soft.
  • Add broccoli, a pinch of salt, and a quart of water, Bring to a boil, then simmer on low for 5 minutes (or to your preference.) Let cool slightly, if desired.
  • Add silk tofu to the pot. Use an immersion blender to puree soup until mostly smooth.
  • Reheat to serving temperature.
  • Serve with freshly ground pepper.
